Generally speaking, you can backup all iPhone data from iTunes and iCloud before resetting your iPhone. Several days ago, I have met the same trouble. Since my iPhone stuck on Apple logo, so I have to turn to factory settings to restart it. Most disappointed thing is there is no backup of my iPhone. So all data erased. As for you, if you are used to backup data regularly, you can recover data from iOS devices.

To be honest, it is a must to back up your iOS data before jailbreak. 
The reason is that jailbreak can easily get your data files lost and deleted.
For iOS users, the common way to sync and back up iOS data is to use iTunes or iCloud, which is simple to operate and safe.

As far as I know, iTunes is the best and secure option to back up data. Also, I have read about itools.but do not know if it is actually working by now
