It will cover your phone data if you restore from iTunes backup directly. A better solution is to use iPhone backup extractor tool to help you.

You should check the backup file first. Maybe it is just an empty file. If not, then you can use iphone recovery app to restore files from that backup.

To restore files from iPad backup, maybe you can try pro iOS Data Recovery program. It offers us two recovery modes to recover data for iPad. One is recovering from iTunes backup files, the other is recovering from iPad directly.

What we need is a backup data extractor since we have a backup files , this will make it easier to recover data

Maybe that's because you overwrote it and you don't know or something you didn't realize was wrong. You might as well follow the iOS Data Backup & Restore to  backup and restore your data again, which might be helpful to you.

Whether you erase all content or settings on your iPad before data recovery?

To protect your current data without overwriting the deleted ones, you'd better recover needed items with the aid of a professional 3rd-party iOS data recovery Mac

It does a good job for you in a secure manner and find data with high success rate.

Good news is that now it is added to the list of 2018 Halloween special product with up to 60% off discount.
