It depends on the car and what your trying to connect to had same problem my iPhone 8 on my jaguar iphone 7 connects fine

As advised in my read post, you can disable and enable your bluetooth, forget all paired devices and match again, restore iPhone, restore all settings or reset network settings.

Sometimes, it's possible your iPhone XS Max has related software issue. In this case, a Mac iOS system repair can well help to repair this bluetooth problem with no data loss.
